Fish Broth with vegetables and toast

I tasted a very nice lobster-bisque once near my old highschool. That one is pretty hard to make. This is almost as good but sloppier.

Fish Broth with vegetables and toast

Ingredients / Shopping list:

Easy way to cook Fish Broth with vegetables and toast

  1. split union into 2 parts, dice up the first half
  2. add garlic (thinly sliced)
  3. Heat a pan and put in olive oil + diced onion + sliced garlic
  4. Add bayleaves + thyme branch
  5. Add Fish broth tablet (crumble it)
  6. After 2 minutes, add the tomato paste, let everything brown a bit
  7. Add tablespoon of fish-sauce + tablespoon of worchestershire sauce
  8. Add the wine, make sure to sir the bottom of the pan to remove all the little brown parts (the wine will help with that)
  9. After everything is loosened up, add 300ml of water to delute it a bit more.
  10. Your broth now needs some time to slowly cook for 10 minutes or until you finish the dish, add some water to the broth if you feel its evaporating to much.
  11. Slice the bread up in slices a long as possible of about 1.5cm thick
  12. Sprinkle the sliced bread with oliveoil and kosher salt
  13. Bake them in the oven till they are nice and crunchy
  14. Heat up another pan with some olive oil
  15. Bake your fish parts, they will only need about 5-6 minutes
  16. Heavily pepper them with freshly ground black pepper
  17. By this time your broth should be ready, and your bread slices should be about to get there.
  18. Mix the mayonaise and Siracha to create Siracha-Mayonaise


Pro version

  1. Heat the pan and the oven
  2. Chop garlic + half an onion + oliveoil, add to pan with bayleaves and thyme, fish-sauce, worchestershire add fish broth tablet, let it caramalize a bit
  3. Make toasted bread in oven, takes about 7 min, continue with next step
  4. Deglaze the first pan with wine, after that, add 300ml of water, let it cook for at least 10 minutes (low fire)
  5. Simultaniously, fire up a frying pan and fry the seefood with a tablespoon of oil, use black pepper heavily


Tips / Plating:

  1. Serve in a wide bowl, add one of the toast with some siracha mayonaise and a bit of parsley
  2. Don't add too much water to the broth, you can always add more, you cannot take it out.
  3. I always heat my fish cube with the onions, to let it karamelize a bit, before adding the wine. Make sure it does not burn
