Easy way to cook Fiskesuppe

  1. Soak the cod fillets in fresh water for about 30 minutes to remove any saltiness.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the chopped onion and carrots, sautéing for 5-7 minutes until softened.
  4. Add the potatoes and garlic, cooking for another 10 minutes, stirring occasionally.
  5. Stir in the salt, pepper, bay leaves, and minced garlic.
  6. Pour in the fish broth and bring the mixture to a gentle boil.
  7. Add the soaked cod fillets to the pot and cook for about 20-25 minutes, or until tender.
  8. Remove the bay leaves before serving.
  9. In a blender, mix together 100ml coconut milk and 200ml of the cooking liquid until smooth.
  10. Pour the mixture back into the pot, stirring well to combine.
  11. Stir in the juice of 1 lemon for a tangy flavor.
  12. Add a pinch of salt and pepper if needed.
  13. Ladle the soup into deep ceramic bowls or mugs.
  14. Garnish with lemon zest, fresh dill, or parsley.
  15. For an extra touch, add a few shrimp or poached egg on top.

  1. Add a splash of coconut milk to create a rich, dairy-free version.
  2. Try adding shrimp, scallops, or mussels for extra protein and flavor.
  3. Add additional vegetables like spinach, broccoli, or zucchini for extra nutrients.
  4. For a dairy-free option, use coconut milk as described above.
