Garlic Butter Baked Salmon with Veggies

Easy way to cook Garlic Butter Baked Salmon with Veggies

  1. Arrange broccoli florets, carrots, zucchini slices, and any other preferred veggies on a separate baking sheet
    or roasting pan. Drizzle with olive oil, season with salt, pepper, and red pepper flakes (if using), and toss to
    coat.
  2. Preheat the oven to 200°C (400°F).
  3. Place salmon fillets on a baking sheet or roasting pan lined with parchment paper.
  4. Drizzle olive oil over the skin side of the salmon, then rub garlic slices and lemon zest into the flesh.
  5. Season lightly with salt and pepper.
  6. Arrange broccoli florets, carrots, zucchini slices, and any other preferred veggies on a separate baking sheet
    or roasting pan.
  7. Drizzle with olive oil, season with salt, pepper, and red pepper flakes (if using), and toss to coat.
  8. Place the salmon fillets and veggies on the same baking sheet or divide them between two sheets for batch
    cooking.
  9. Bake at 200°C (400°F) until the salmon is cooked through and the skin is crispy, about 10–15 minutes. For
    extra-crispy skin, broil for the last few minutes.
  10. In a small saucepan or microwave-safe bowl, melt butter with minced garlic.
  11. Stir in lemon zest and juice.
  12. Drizzle the garlic butter over baked salmon and veggies during cooking or as a finishing touch after baking.
